Ingredients:
• 3 farm fresh, preferably fertile eggs
• 1/4 cup chopped sweet onion, preferably vidalia
• 1/2 cup grated zucchini
• 2 Tablespoons ghee
• handful of baby shiitakes
• handful of chopped baby kale
• couple shakes ground turmeric
• couple shakes cumin powder
• salt and pepper to taste
• fresh cream (half & half, whipping or non-dairy)
• dash tamari
Sauté onion, turmeric and cumin in ghee until translucent. Add zucchini and sauté until slightly tender, then add shiitakes and kale and continue stirring and cooking over med low heat. Meanwhile, beat eggs with salt and pepper and cream. Add tamari to veggie sauté once shiitake is tender and bring heat up to medium. Add egg mixture and cook until desired firmness.
