Fresh and zesty, a tasty vegetable side dish.
Ingredients:
8 cups broccoli florets
2/3 cup Mayo
½ cup chopped red bell peppers
½ cup yogurt
¼ cup crumbled feta
2 Tbsp. fresh chopped parsley
2 Tbsp. fresh chopped dill
2 tsp. lemon zest
6 chopped Kalamata olives
½ cup gluten free bread crumbs
3 tsp. olive oil
Directions:
Lightly steam broccoli for 3-4 minutes. Combine mayo, pepper, yogurt, feta, parsley, ½ of the dill (1 Tbsp) lemon zest, and olives in a large bowl. Add the broccoli and toss to coat. Spoon into greased 2 quart baking dish. Mix bread crumbs, remaining dill, and olive oil in a small bowl. Sprinkle over broccoli with a touch more feta. Bake at 375ºF until golden brown, approximately 20 minutes. Serve warm. Serves 6. Approx. 275 calories. Adapted from Eating Well Magazine, March 2019 edition.
