"What kind of cake do you want for your birthday?" I ask. My husband answers, "Chocolate!" So while searching for the perfect filling to go between the layers of his cake, I developed this recipe for a dairy-free chocolate pudding, which is simple perfect all by itself.
1 – 7.4 oz can of organic sweetened condensed coconut milk
1 ¼ cup almond milk
3-4 Tbsp cocoa powder
5 Tbsp organic cornstarch
¼ cup demerara sugar
1 tsp fair-trade vanilla
Combine all ingredients in a heavy saucepan. Whisk until smooth. Cook over medium heat, stirring constantly until pudding is very thick. Pour into individual serving dishes and chill before serving.
